Bimuelos (Matzoh Brie with Savory Sauce)

INGREDIENTS

1 Matzoh
1/4 c Liquid egg substitute
1/2 ts Chopped walnuts; ground into small pieces or bits (optional)
1 pn Salt
1 pn Fresh ground black pepper
Short squirt of Pam
5 tb Honey
1 tb Orange juice
1 Orange; rind of, grated
1 ts Cinnamon

INSTRUCTIONS

Break up matzo and place ina bowl.  Cover with warm water and soak for a
minute or so, then squeeze out the water.  Combine the softened matzo, egg
substitute, ground walnuts (if using), salt & pepper.  Coat bottom of
nonstick frying pan with a squirt of Pam. Heat until the pan just begins to
sizzle. Drop tablespoonfuls of batter into the hot pan. Fry until crisp and
browned on either side. Drain on paper towels. Heat all the syrup
ingredients in a nonreactive saucepan for a few minutes. Drizzle a Tbsp. of
syrup over each serving. This makes enough syrup for 16 pancakes. Leftover
syrup will keep in the refrigerator in a tightly sealed jar for several
weeks.  reheat syrup before serving after storage. Serves 1. 486 calories
