INGREDIENTS

1/2 | c | Onion, chopped |
1/2 | c | Celery, chopped |
1 | Garlic clove, minced | |
1 | Potato, peeled and chopped | |
1 | Chicken broth, or Veg. broth | |

1 | Great northern beans, rinsed | |
and drained | ||
1 | Black beans, rinsed and | |
drained | ||
1 | Corn 11oz, drained | |
1 | Green chiles 7oz, whole | |
1 | t | Cumin |
1 | T | Fresh cilantro, chopped |
1 | T | Lime juice |
1/4 | c | Light sour cream |
INSTRUCTIONS
Heat oil in large saucepan over medium heat until hot. Add onion, celery and garlic; cook and stir 2-3 min. or until vegetables are tender. Stir in potato, broth, beans, corn, chiles and cumin; mix well. Cover; cook 12-15 minutes or until potato is tender, stirring occasionally. Stir in cilantro and lime juice.
