Black Bean And Ham Pilaf

INGREDIENTS

1/2 c Sliced green onions
1 Green pepper, in thin bite
size stirs 1 cup
1 Clove garlic, minced
1 T Oil
2 1/2 c Quick brown rice
2 1/2 c Chicken broth or bouillon
15 oz Can black pr red kidney
beans rinsed drained
4 oz Fully cooked ham, in bite
size pieces 1 cup
3/4 t Oregano, crushed
2 Tomatoes, chopped OR
14 Cherry tomatoes, halved or
quartered

INSTRUCTIONS

In large squce pan, cook gren onions, pepper strips and garlic in hot
oil for 1 minute. Add uncooked rice. Cook and stir for 2 minutes  more.
Stir in broth, beans, ham and oregano. Bring to boiling and  reduce
heat. Cook for time suggested on rice pkg. or until liquid is
absorbed. Stir in tomato pieces.  NOTES : Very good. Per serving: 632
cals., 10 g. fat, 16 mg. chol. Can  substitute instant white rice for
