INGREDIENTS

1 cn Black beans
1 cn Black eyed peas
2 Scallion
1 Red bell pepper
1/2 Green bell pepper
1 c Chopped parsley
1 Clove garlic
1/2 c Olive oil
3 tb Balsamic vinegar
2 tb Dijon mustard
Salt & black pepper

INSTRUCTIONS

DRESSING
Dressing: Mix together in a small jar the olive oil, vinegar,
mustard, salt & pepper. Put on tight-fitting lid & shake to mix well.
Salad: In large salad, mix together black beans, black eyed peas,
scallions, red bell pepper, green bell pepper, parsley & garlic. Pour
dressing over all & toss well. (you can chill before serving or serve
at room temp.)
Approximately 4-8 minutes.
Per serving (excluding unknown items): 1712 Calories; 113g Fat (58%
calories from fat); 47g Protein; 140g Carbohydrate; 0mg Cholesterol;
428mg Sodium
