Sweet onion; (vidalia is wonderful, however out of season red will do) |

Corn kernels; (frozen are fine) |

Juice from 5 juicy limes |

Freshly ground black pepper |

Mango; peeled and sliced, (garnish) |
INSTRUCTIONS
Mix all ingredients except mango. Chill for at least 2 hours or
overnight. Serve on warmed no fat or low fat corn tortillas and a
great salsa (we crave Arriba Chipolte Salsa). Garnish with mango.
Great to make and serve in a Chicago heat wave (like this weekend).
