Onions; chopped

Green peppers; cut in strips

Cloves garlic; minced

Bay leaves

Oregano

Salt

Pepper

(scant) olive oil
Salt & pepper to taste
INSTRUCTIONS
After washing beans thoroughly, soak beans overnight. Next day, boil beans
in same water used for soaking. Add salt & pepper. Pour olive oil in a
frying pan & saute onions & peppers until limp, not brown. Add garlic, bay
leaves & oregano. Cook for 5 minutes & add to black beans. Cook until beans
are very tender. Serve over white rice & top with finely chopped green
onions.
