Soften 1 large onion and 4 cloves of garlic in a little bit of oil. Add 1
Ib of black beans (no need to soak). Cover with water, boil rapidly for 10
mins and then simmer gently until just done. Roughly mash beans with a
potato masher, adding stock to the desired consistancy. Add salt to
taste. Serve with crumbled cascabels which have been fried in a litte
oil, crumbled toasted dried oregano and crumbled Caerphilly. Serves 5-6
people.
