Black Bean Soup W/cascabels & Caerphilly

INGREDIENTS

1 lg Onion
4 Cloves garlic
Little bit of oil
1 lb Black beans (no need to soak)
Salt to taste
Crumbled Cascabels;fried in a litte oil
Crumbled; toasted, dried oregano
Crumbled Caerphilly

INSTRUCTIONS

Soften 1 large onion and 4 cloves of garlic in a little bit of oil. Add 1
Ib of black beans (no need to soak). Cover with water, boil rapidly for 10
mins and then simmer gently until just done. Roughly mash beans with a
potato  masher,  adding stock to the  desired consistancy. Add  salt  to
taste. Serve  with  crumbled cascabels which have been fried in a litte
oil, crumbled toasted dried oregano and crumbled Caerphilly. Serves 5-6
people.
