INSTRUCTIONS
If using dried beans, soak in water to cover overnight; or bring to a boil, remove from heat, and let soak 1-2 hours. After soaking, drain the beans and cook until tender in 2-3 gallons of water for 30 to 45 minutes. Drain. Saute the ginger and garlic in oil for 1 minute. Add the cayenne, onions, and cumin and saute until the onions are softened. Stir in the celery, peppers, and thyme and saute until tender. In a separate pot, cook the diced sweet potatoes at a rapid boil, until they are tender but not overcooked. Combine the well-drained beans and the cooked sweet potatoes with the vegetable mixture, the orange juice concentrate, and peel. Salt to taste. Preheat the oven to 350F. Fill each tortilla with 3/4 Cup of the bean filling. Roll up and place, seam sided down, in lightly oiled pans. Approximately 4-5 burritos fill each pan.
