1 Onion; chopped
1 Green pepper; chopped
32 oz Black-eyed peas; drained
16 oz Can diced tomatoes
1 ts Salt
1 ts Sugar
1/2 ts Pepper
1/4 ts Garlic; minced
3 Mini cornbread loaves; warm, split lengthwise

INSTRUCTIONS

Brown beef and drain. Stir in green pepper and onion. Cook until tender.
Add other ingredients. Bring to a boil and simmer for 20 minutes, stirring
occasionally. Serve over cornbread.
Per serving: 375 calories, 12 grams fat, 24 grams protein, 1023 mg sodium,
31 mg cholesterol, 28 grams carbohydrates
