Black Trumpet Mushrooms with Leeks And Garlic

INGREDIENTS

15 g Butter; ( 1/2oz)
1 ts Sesame oil
2 Leeks; finely shredded and
; thoroughly washed
5 ml Fresh ginger; finely shredded (
; 1/4 inch)
2 Garlic cloves; crushed
1 125 gram pac black trumpet mushrooms; brushed and sliced
1 ds Soy sauce
1 pn Salt
1 pn Sugar
1 ts Cornflour
1 tb Water

INSTRUCTIONS

Place the butter and oil in a frying pan and over a moderate heat
saute the leek, ginger and garlic for approximately 1 minute. Add the
mushrooms and continue to saute for a further 3-4 minutes.
Add the soy sauce, salt and sugar and if the mixture is wet add the
cornflour combined with the water. Serve immediately.
