INSTRUCTIONS
There was a request for interesting pancake recipes. I'm not sure this
qualifies as interesting but I just read it in the March issue of Family
Circle magazine. Makes 4 servings.
Combine the egg, egg white, yogurt and oil in blender; whirl until smooth.
Add the flour, sugar, baking powder, baking soda and salt; whirl to blend.
Add the oats; whirl briefly just to mix.
Heat a griddle or large skillet over medium heat. Lightly brush with
vegetable oil. Spoon about 3 tablespoons batter for each pancake onto
griddle. Cook until bubbles form on top, 2 to 3 minutes. Flip over; bake
until browned, about 2 minutes. Keep warm until all pancakes are cooked.
Serve the pancakes with maple or fruit syrup.
