INGREDIENTS

1 c Sugar
1/2 c Shortening
1/2 c Buttermilk
1/4 ts Salt
2 c Oatmeal
2 c White flour
1/2 ts Soda
1 pk (8-oz) dates; chopped
1/2 c Sugar
1 ts Vanilla
1/4 ts Lemon juice
1 c Water

This recipe was my great aunt's; it dates back to about 1912.
In a saucepan, boil the filling ingredients to a paste; cool. Cream
shortening; add sugar and mix until creamy. Add soda to buttermilk and add
to mixture alternately with flour and salt. Add oatmeal to make a soft firm
dough. Chill in refrigerator for an hour or more. Remove from refrigerator
in small portions and roll out on a floured board. Roll quite thin (about
1/8") and cut out with a small round cookie cutter. Bake 10 minutes on an
ungreased cookie sheet at 325 deg. Remove from oven onto brown paper and
cool. Cookies may be stored in airtight containers, or frozen until ready
to use. Then spread filling on one circle, cover with second circle to form
sandwiches.
