INSTRUCTIONS
Mix blueberries with sugar and set aside. Sift flour and baking soda into
bowl and mix with sugar. Make a well in the centre and add the rest of the
ingredients. Mix lightly, just so everything is moist. Almost fill
greased muffin tins and place in a moderately hot oven for 20-25 minutes.
Makes about 11-12 (don't know why but I only ever get 11!!).
With the leftover blueberries I make blueberry pancakes. Using a normal
pancake mix, substitute the blueberry juice for the milk and place the
blueberries over the top with cream and maple syrup
