INGREDIENTS

4 Rounded cups flour
2 c Sugar
2 tb Baking powder
2 ts Salt
4 Eggs
1/2 c Vegetable oil
1 Stick butter – melted
1 1/2 c Milk
2 ts Vanilla extract
16 oz Frozen blueberries or 1 pint fresh

INSTRUCTIONS

Directions:
Preheat the oven to 350 degrees. Sift together all the dry
ingredients. Make a well in the center and add the eggs, oil, butter,
milk, and vanilla. Gently hand mix until all the liquid is absorbed.
Fold in the blueberries. Place a scoop of batter into each unit of a
wax paper-lined muffin pan. Bake for 30-40 minutes, until firm to the
touch. Yields one dozen, 6 oz. muffins.
