INGREDIENTS
| 1 | lb | Dried Navy beans; (2 cups) |
| 2 | ts | Sugar |
| 1 | ts | Salt |
| 1 | ds | Pepper |
| 7 | c | Cold water |
| 1/4 | lb | Salt pork |
INSTRUCTIONS
Pick over and wash beans thoroughly in cold water. Place beans in a 3 or 4-quart saucepan, add remaining ingredients, cover and SIMMER for 2 1/2 to 3 hours until beans are tender but not mushy. Shake the pan occasionally to prevent sticking. Edible cow peas and soy beans may be cooked in the same manner. Makes about 6 cups.
