Braised Onion Slices with Bourbon

INGREDIENTS

2 tb Butter
2 tb Olive oil
4 Bermuda onion; sliced 1-inch thick
1 ts Salt
1/2 ts Black pepper; freshly ground
1/4 c Beef broth; canned or homemade
1/4 c Bourbon

INSTRUCTIONS

Heat butter and oil. Add onions and sear on high for 2 minutes. Add salt,
pepper and broth. Reduce heat and simmer 10 to 12 minutes. Add bourbon and
cook down for 3 minutes.
Serving Ideas : Perfect accompaniment for roast beef
NOTES : I traditionally serve prime rib for Christmas.  This is a perfect
accompaniment.
