BRAISED RED CABBAGE
VINAIGRETTE
How to Prepare the Slaw:
1. Bring the vinegar, water, jalapeno and honey to a boil in a large
saucepan.
2. Add the cabbage, season with salt and pepper to taste, and cook
for 15 minutes or until the cabbage is just wilted.
3. Drain in a colander and place in a large bowl.
4. Balance the green beans in a large pot of salted boiling water
until just tender, approximately 2-3 minutes.
5. Drain and add to the cabbage.
6. Add the orange segments, toss with the vinaigrette and season with
salt and pepper to taste.
How to Prepare the Vinaigrette:
1. Combine the juices, basil and onion in a blender. Blend until
smooth.
2. With the motor running, slowly add the olive oil, drop by drop at
first, until emulsified.
3. Season with salt and pepper to taste.
