Braised Seitan with Onion And Fresh Herbs

INGREDIENTS

1 1/2 lb Seitan; sliced 1/2 inch
; thick
1 1/2 lb Onions in 1/4 inch thick crescents
1 tb Minced garlic
12 tb Minced fresh herbs: such as rosemary; sage or thyme
1/4 ts Freshly ground black pepper
1/3 c Olive oil
3 tb Mirin or dry sherry
1 Pinches salt
Water or stock

INSTRUCTIONS

Preheat oven to 350 degrees.
Combine all of the ingredients, except the seitan in a skillet with a
heavy bottom and a tight lid. Cook gently for 20 30 minutes.
Spread 1/2 of the onion mixture on the bottom of a baking dish.
Layer the seitan slices and spread the remaining onions on top.
Add enough water or stock to barely cover the onions and bake
uncovered for 30 - 40 minutes.
