INGREDIENTS

450 g Bramley apples; peeled, cored and
; sliced (1lb)
100 g Caster sugar; (4oz)
1 250 g carton quark; low fat cheese
1 500 g carton low fat custard
200 ml Cloudy apple juice; (7fl oz)
4 tb Brandy
75 g Plain chocolate; grated (3oz)
2 tb Cocoa
16 Sponge fingers; (16 to 18)

INSTRUCTIONS

Place the apples and 75g (3oz) of the sugar in a pan, cover and slowly
bring to the boil. Simmer for 4-5 minutes or until soft. Remove from
the heat and cool.
Place the quark, custard and remaining sugar in a large bowl and beat
together until smooth. Place the apple juice and brandy in a shallow
bowl. Mix together the chocolate and cocoa.
Dip half the sponge fingers in the apple juice, then place in the
base of one large or 4 individual glass dishes. Spoon over half the
apple and a third of the chocolate mix. Spread over half the cheese
mixture. Repeat the layers, then sprinkle over the remaining
chocolate. Chill for at least 1 hour in the fridge. Serve cold.
