Here is a Bran Muffin recipe I originally got from this list about 2 years
ago. It is the best muffin recipe I've tried without added fat!
Heat oven to 400 degrees. Mix cereal, milk and sugar in bowl; let stand 5
minutes. Stir in egg equivalent and applesauce. Add dry ingredients.
Spray muffin pan with no-stick spray and fill 2/3 full. Bake in oven 18-20
minutes. Makes 12 muffins.
