Bran Muffins with Chocolate Filling

INGREDIENTS

2 c Semisweet chocolate chips
1 pk (8-ounce) cream cheese; softened
1/4 c Sugar
2 tb Plus 1 c. milk
2 1/2 c All-purpose flour
1/2 c Firmly packed brown sugar
1 ts Baking soda
1 ts Baking powder
3/4 c Butter
1/2 c Crushed all-bran cereal
2 Eggs; slightly beaten
1 ts Vanilla extract

Preheat the oven to 350. Melt the chocolate chips in a microwave. Set aside
to cool. Cream together the cream cheese, sugar, 2 T. of the milk, and the
melted chocolate until smooth and well-blended.
In a separate bowl, combine the flour, brown sugar, baking soda, and baking
powder. Cut in the butter, and mix well until crumbs form.
In another bowl, combine the cereal and the remaining 1 c. of milk. Let
stand for about 5 minutes or until the cereal softens. Stir in the eggs and
the vanilla. Pour the bran mixture into the bowl with the dry ingredients
and stir until moist. Lightly coat a muffin tin with cooking oil spray and
scoop the batter into 12 muffin cuips, filling each halfway. Pour the
chocolate mixture over the bran batter, dividing evenly among the muffin
tins. Finish with another layer of batter. Bake 15 to 20 minutes or until
the tops spring back when touched.
