I'm enjoying this digest tremendously so it's about time i post a recipe. I
made this pudding for friends last Friday; as hot puddings are unknown
here, they looked rather puzzled at first but they all loved it! I our
family we also call it "old men's pudding" as you don't need teeth for this

Preheat oven to 180/350. Combine milk and cream in a small saucepan add
vanilla pod (cut open lengthwise). Steep on low fire for 10-15 minutes.
Remove pod, scrape out black seeds and put in milk. When mixture has
cooled, beat in eggs and a pinch of salt.
Spread bread with butter on both sides. Spread jam on both sides. Put a
layer of bread in a greased oven dish. Sprinkle half the sugar over it,
add the sultanas. Cover with second layer of bread. Add second half of
sugar. Pour milk-cream-vanilla-egg mixture on top. Bake for 45 minutes
until golden brown. Serve with powdered sugar. Serves 5-6.
