Bright Star Spinach And Rice Casserole

INGREDIENTS

1/2 c Rice – raw
1/2 lb Butter
1/3 c Flour
1 qt Milk
3 Eggs
2 lb Spinach, cooked and chopped
1/4 c Green onions, chopped
1 1/2 c Feta cheese, crumbled
1/4 c Parmesan cheese
1 T Paprika
Salt to taste
Pepper to taste
White pepper to taste

INSTRUCTIONS

Cook rice according to directions, set aside.  Melt the butter.  Add
flour and stir until thoroughly mixed. Cook  about two minutes, then
allow to cool slightly.  Add mixture to  simmering milk a small amount
at a time. Whip to break up all the  lumps then whip in the eggs until
creamy and smooth. Let simmer about  10 to 15 minutes.  Place spinach
in bottom of 9 x 13 casserole dish.  Add rice, feta,  cheese and green
onions spreading equally over spinach. Salt and  pepper to taste. Pour
cream sauce over top.  Sprinkle with parmesan cheese and paprika.  Bake
at 350 degrees for 20-25 minutes.  Bright Star's restaurant in
