Broccoli Cheese Soup

INGREDIENTS

1/2 c Chopped onion
1 Carrot; grated
1 pk (10-ounce) frozen broccoli cuts
3 c Water
1 ts Worcestershire sauce
1 c Plus 1 tablespoon Basic Roux Mix
1 tb Instant chicken flavored bouillon granules
1 1/2 c Shredded cheddar cheese.

INSTRUCTIONS

Place onion and carrot in a 1-quart casserole: cover. Microwave on high 3
minutes. Add broccoli cuts; cover and microwave on high 5 minutes. Set
aside.
Measure water into a 2-quart glass measure; add Worcestershire sauce. Whisk
in roux Mix and bouillon granules. Whisking midway through cooking,
microwave on high 7 minutes, or until slightly thickened. Add cooked
vegetables and cheese; stir. Microwave on medium-high (70 percent) 1 to 2
minutes, or until heated through. Makes 5 (1-cup) servings.
Each serving: 254 calories, 17 grams protein, 10.5 grams fat (39 percent of
total calories), 19 grams carbohydrates, 3 grams dietary fiber, 39
milligrams cholesterol, 333 milligrams sodium.
