Broccoli Lovers Casserole

INGREDIENTS

2	pk	(10 oz) frozen chopped
		Broccoli, drained
2	c	Round butter flavored
		Crackers, crushed
1/3	c	Butter, melted
1/4	c	Onion, grated
3/4	c	Mayonnaise
1	cn	(10 1/2 oz) cream of
		Mushroom soup
2		Eggs, beaten
1 1/2	c	Cheddar cheese, shredded

INSTRUCTIONS

place packages of frozen broccoli in microwave safe dish and microwave on
high power 5-6 min. until defrosted. drain. set aside. combine crackers and
melted butter. place 1/2 of the crackers in the bottom of a 10 oz quiche
dish or pie plate. combine broccoli with remaining ingredients. mix well
and pour over the prepared cracker base. top with remaining crackers.
microwave on med. (50%) power for 18 to 21 min. or until mixture is set.
let stand 6-8 min. recipe from "Wisconsin Cheese in a Flash"
