Broccoli Souffle

INGREDIENTS

2 tb Chopped green onion
3 tb Butter or margarine
3 tb Flour
Freshly-ground black pepper; to taste
1 c Milk
4 Eggs; separated
2 tb Grated Parmesan cheese
1 pk Frozen chopped broccoli – (10 oz); thawed
1 cn Spam luncheon meat – (12 oz); cut into chunks
1/4 ts Salt
1/4 ts Cream of tartar

INSTRUCTIONS

Butter bottom of 1 1/2-quart souffle dish. Tie an aluminum foil
collar of double thickness around dish, extending 2 inches above top.
In medium saucepan, saute onions in butter until transparent; blend in
flour and pepper. Stir in milk; cook and stir over medium heat until
mixture thickens and boils.
Beat egg yolks slightly; stir in a little of the hot mixture. Add
yolks to saucepan with cheese; cook and stir over low heat until
mixture thickens. Remove from heat.
Place broccoli and Spam in food processor; use chopping blade and
process until finely chopped (or finely chop by hand); stir into
sauce mixture. Beat egg whites with salt and cream of tartar until
stiff but not dry. Fold gently into Spam mixture. Pile into prepared
souffle dish.
Bake in 375 degree oven 35 to 40 minutes, or until top is lightly
browned and souffle is set. Serve immediately.
This recipe yields ?? servings.
Nice to know: Sauce mixture may be completed ahead of time. Heat
sauce and fold in the beaten egg whites just before serving.
