Broccoli Souffle

INGREDIENTS

1 x SANDI BROOKS (WFCJ53B)
2 pk Frozen broccoli; (10 oz each
3 ea Eggs
1 x Salt and pepper to taste
1 tb Onion soup mix
1/2 c Mayonaise
1 x Grease for the pan
2 tb Matzah meal, divided

INSTRUCTIONS

Cook the broccoli according to package directions. Drain thoroughly.
Set aside. In a mixing bowl, beat the eggs very well with the salt,
pepper and onion soup mix; ass the mayonaise and contiinue beating
until well blended. Stir in the cooked broccoli. Grease a 7 x11 1/2"
baking pan. Dust lightly with 1 Tbls of the matzah meal. Pour
broccoli in the pan and sprinkle the top with remaining matzah meal.
Bake at 350 for 40-50 minutes, or until the top is golden. Serves
