Broccoli Sprout And Tofu Spread On Toast

INGREDIENTS

8 oz Mori-Nu lowfat tofu
1 T White or brown rice miso
3 T Tahini
2 T Lemon juice
1 c Broccoli sprouts
10 Toasted whole grain bread

INSTRUCTIONS

In a small bowl, mash the tofu, miso, tahini and lemon juice together
with a fork until thoroughly mixed. Lightly chop sprouts, then fold
into tofu mixture. Spread thickly on toast. Top with extra broccoli
sprouts. Keep refrigerated in a covered jar.  Found on Epicurious
