Broccoli with Shallots And Croutons

INGREDIENTS

1 15 cm length baguette
1 Garlic clove
Olive oil for frying
500 g Broccoli; (1lb)
4 tb Shallots
Lemon scented olive oil
Splash balsamic vinegar
Croutons

INSTRUCTIONS

Take the baguette and rub it with the garlic, then cut it into small
cubes and fry them in the olive oil, and then drain them and set
aside on a piece of kitchen paper.
Meanwhile, bring a large pan of salted water to the boil. Cook
broccoli for about 5 minutes. Drain and discard the water and return
the broccoli to the pan and throw in the croutons, shallots, lemon
scented olive oil and vinegar and toss as you would a salad.
Transfer to a warmed bowl and serve.
