Let us thank God heartily as often as we pray that we have His Spirit in us to teach us to pray. Thanksgiving will draw our hearts out to God and keep us engaged with Him; it will take our attention from ourselves and give the Spirit room in our hearts.

Broiled Eggplant

INGREDIENTS

1 md Eggplant
1 ts Salt
1/4 c Butter; melted
2 Eggs
1 c Dry bread crumbs
1/4 c Grated Parmesan cheese
1/2 ts Dried basil leaves
1/2 ts Dried parsley flakes

INSTRUCTIONS

Prepare eggplant in 1/4" slices. Sprinkle cut sides with salt; let drain in
colander 30 min. Beat butter and eggs. Mix remaining ingredients. Dip
eggplant slices into egg mixture, then into bread crumb mixture. Place on
ungreased broiler pan. Set oven to broil or 550*. Broil with tops about 5"
from heat, turning once, until golden brown, about 4 min.
