INGREDIENTS
1/2 | c | Sour cream |
1/4 | c | Chopped fresh cilantro |
1/4 | c | Mayonnaise |
2 | T | Chopped fresh parsley |
1 | t | Chopped shallots |
2 | T | Butter or margarine, Melted |
1 | T | Chopped fresh parsley |
1 | T | Lemon juice |
4 | 6-8 oz red snapper fillets | |
3/4 to 1-inch thick |
INSTRUCTIONS
In blender, combine all sauce ingredients; blend on high speed until well mixed. Set aside. In small bowl, combine butter, parsley and lemon juice; mix well. Brush butter mixture over snapper fillets. If desired, sprinkle fillets with salt and pepper. Place fillets on broiler pan, skin side down. Broil 4 to 6 inches for 8 to 10 minutes or until fish flakes easily with fork. Serve cilantro sauce with snapper fillets.
