Broiled Tomatoes On A Bed Of Spinach

INGREDIENTS

4 Tomatoes, sliced in half
horizontally
1 c Fresh bread crumbs
2 T Freshly grated parmesan
cheese
2 T Olive oil
Salt and freshly ground
pepper
**INGREDIENTS FOR SPINACH***
2 lb Spinach, trimmed washed
and well-drained
2 T Olive oil
2 Cloves garlic, finely
chopped

INSTRUCTIONS

How to Prepare Tomatoes:  Preheat the broiler. Place the tomatoes on a
baking sheet,  cut-side-up. Combine the bread crumbs and cheese and
sprinkle over  the tops, drizzle with olive oil, and season with salt
and pepper to  taste. Broil the tomatoes until the crumbs turn golden
brown.  How to Prepare Spinach:  Heat the oil in a large wok or saut
pan until almost smoking. Add the  spinach and garlic, season with salt
and pepper to taste, and saut  for two minutes or until just wilted.
Place on a large platter and  top with tomatoes.  © 1997 Lifetime
