Broiled Tomatoes With Blue Cheese

INGREDIENTS

4 Tomatoes
1 t Granulated Sugar
2 T Fresh Basil, chopped
1/4 t Salt
1 ds Black Pepper
1 c Soft Bread Crumbs
2 T Butter, melted
1/4 c Blue Cheese, crumbled

INSTRUCTIONS

Pre-warm the oven to broil.  De-stem each tomato and cut into slices
about 2 inches thick. Place  the tomato slices on a broiler pan as you
work.  In a small mixing bowl, blend together the sugar, basil, salt,
and  pepper. Sprinkle a bit of the mixture on top of each tomato slice,
then slip the pan under a hot broiler for about 2 minutes.  Meanwhile,
add the bread crumbs to the melted butter and toss lightly  with a fork
to coat. Add the blue cheese to the mixture and toss  again.  Spoon the
mixture on top of the tomato slices and broil for just a  minute or so,
until the bread crumbs are lightly browned. Serve  immediately.  Posted
