Bronzed Catfish And Hush Puppies

INGREDIENTS

18 oz Catfish fillets, 6 ounces
each
1/4 c Butter or margarine, melted
4 t Magic Seasoning Blends
seafood magic OR
1 t Salt, onion powder gr.red
pepper basil each AND
1/2 t Garlic powder and thyme
Lemon wedges
1 c Cornmeal
1 c All-purpose flour
1 T Baking powder
2 t Magic Seasoning Blends
seafood magic OR
3/4 t Ground red pepper, and
1/2 t Salt, pepper dried thyme
and
1/4 t White pepper, and
1/8 t Dried oregano leaves
1/4 c Green onions – tops only
very finely chopped
2 Eggs, beaten
1 c Milk
2 T Vegetable oil, + more for
frying

INSTRUCTIONS

Prep time: 10 minutes; Cooking time: 8 minutes; Degree of difficulty:
Easy  Brush both sides of fish with butter, then coat both sides with
seasonings. Heat 10-inch cast-iron skillet over medium-high heat  until
smoking, 3 to 5 minutes. Add 2 fillets and cook until just  opaque at
center, about 2 minutes per side. Keep warm in oven and  repeat with
remaining fillets. Serve with lemon wedges and  Hushpuppies. Makes 4
servings.  PER SERVING Calories 300 Total Fat 18 g Cholesterol 130 mg
Sodium 775  mg Carbohydrates 1 g Protein 31 g  Hush Puppies  A great
accompaniment to the catfish. Make these first and keep warm  in a low
oven while the fish cooks.  Prep time: 10 minutes plus standing Cooking
time: 5 minutes per batch  Degree of difficulty: Easy  Combine
cornmeal, flour, baking powder and spices in large bowl. Stir  in green
onions. Add eggs and blend well. Bring milk and oil to boil  in small
saucepan. Remove from heat and add to flour mixture in two  batches,
stirring well after each addition. Let stand 15 minutes.  Heat 4 inches
oil to 350øF. in large saucepan or deep fryer. Drop  batter by
tablespoonfuls into hot oil (do not crowd). Cook until dark  golden
brown and cooked through, about 2 1/2 minutes per side. Drain  on paper
towels. Keep warm while cooking remaining batter. Makes  about 30.  PER
HUSHPUPPY Calories 60 Total Fat 3 g Cholesterol 19 mg Sodium 90 mg
Carbohydrates 7 g Protein 1 g  NOTES : Bronzed catfish is a lighter,
faster, simpler version of the  traditional blackened dish. Preheating
your cast-iron skillet is  essential. Use the Seafood Magic OR the
