INGREDIENTS

4 Catfish fillets; (6 oz. each)
1/4 c Butter or margarine; melted
4 ts Magic seasoning blends seafood magic; or
1 ts Salt; and
1 ts Onion powder; and
1 ts Ground red pepper; and
1 ts Basil
1/2 ts Garlic powder; and
1/2 ts Thyme
Lemon wedges
Hushpuppies; see recipe

INSTRUCTIONS

1. Brush both sides of fish with butter, then coat both sides with
seasonings.
2. Heat 10-inch cast-iron skillet over medium-high heat until smoking, 3 to
5 minutes. Add 2 fillets and cook until just opaque at center, about 2
minutes per side. Keep warm in oven and repeat with remaining fillets.
Serve with lemon wedges and Hushpuppies.
