INSTRUCTIONS
1. In a 2-quart saucepan, combine lentils, onion, garlic, the water,
parsley, oregano, and basil. Bring to a boil. Reduce heat to simmer and
cook for
25 to 30 minutes. Pour into serving bowl to cool.
2. In a small bowl whisk vinegar, oil, and salt. Pour mixture over lentils
and mix well. Chill 1 hour.
