INGREDIENTS

2 1/4 c Whole Wheat Flour
1 3/4 c All-Purpose Flour
2 ts Baking Soda
1 ts Salt
2 Eggs; Beaten
2 c Sour Milk; Note 1
1/2 c Molasses
1/3 c Honey
2 ts Finely Shredded Orange Peel; Or Lemon Peel
1 c Chopped Walnuts
3/4 c Raisins

INSTRUCTIONS

Note 1: To Make Sour Milk: Place 2 Tbsp. lemon juice or vinegar in a 2 cup
glass measure. Stir in enough whole milk to make 2 cups liquid. Let stand 5
minutes.
In a large mixing bowl, stir together whole wheat flour, all-purpose flour,
baking soda, and salt; set aside. In another mixing bowl, combine eggs,
sour milk, molasses, honey, and orange or lemon peel; add to dry
ingredients, stirring well until combined. Fold in chopped walnuts and
raisins. Turn batter into two greased loaf pans. Bake in 350F oven about 55
minutes, or till a wooden toothpick inserted near center comes out clean.
Remove from pans; cool thoroughly on wire rack.
Makes 2 loaves.
