Brown Sugar-lemon Glazed Roasted Sweet Potatoes

INGREDIENTS

6 Sweet potatoes, skin on cut
into 2
inch cubes
2 T Vegetable oil
Salt and freshly ground
pepper
4 T Unsalted butter
1 c Brown sugar
1 T Lemon rind, finely grated
2 T Lemon juice

INSTRUCTIONS

How to Prepare:  Preheat the oven to 375 degrees F. Toss the potatoes
with the  vegetable oil and season lightly with salt and pepper to
taste. Bake  in the oven for 25 minutes. While the potatoes are baking,
place the  butter, brown sugar, lemon zest, and lemon juice in a medium
saucepan  and melt over medium heat. Remove the potatoes from the oven
and toss  with the melted sugar mixture. Return to the oven and
continue  cooking for 10 minutes or until the potatoes are cooked
