Bucatini With Bacon And Sundried Tomatoes

INGREDIENTS

125 g Sundried tomatoes in oil
drained 4oz
1 397 gram can chopped
tomatoes
1 T White wine vinegar
1/4 t Chilli powder, up to 1/2 up
to
3 T Freshly chopped parsley
Salt and freshly ground
black pepper
250 g Bucatini, 8oz
1 T Olive oil
1 Onion, chopped
250 g Smoked bacon, diced 8oz

INSTRUCTIONS

Place the tomatoes, vinegar, chilli, most of the parsley and  seasoning
to taste in a blender or food processor and blend until  smooth. Cook
the bucatini following instructions on the pack.  Meanwhile, heat the
oil and fry the onion and bacon for 5-6 minutes,  stirring
occasionally, until golden. Add the cooked bucatini and  tomato
mixture, heat through and transfer to a warmed serving dish.  Sprinkle
with the remaining parsley and serve immediately.  Converted by
