Bucatini with Bacon And Sundried Tomatoes

INGREDIENTS

125 g Sundried tomatoes in oil; drained (4oz)
1 397 gram can chopped tomatoes
1 tb White wine vinegar
1/4 ts Chilli powder; up to 1/2, up to
3 tb Freshly chopped parsley
Salt and freshly ground black pepper
250 g Bucatini; (8oz)
1 tb Olive oil
1 Onion; chopped
250 g Smoked bacon; diced (8oz)

INSTRUCTIONS

1. Place the tomatoes, vinegar, chilli, most of the parsley and
seasoning to taste in a blender or food processor and blend until
smooth.
2. Cook the bucatini following instructions on the pack.
3. Meanwhile, heat the oil and fry the onion and bacon for 5-6
minutes, stirring occasionally, until golden.
4. Add the cooked bucatini and tomato mixture, heat through and
transfer to a warmed serving dish. Sprinkle with the remaining
parsley and serve immediately.
