INGREDIENTS

Vegetable cooking spray
1 c Chopped onion
1 c Coarsely shredded carrot
1 c Bulgur; (cracked wheat)
Uncooked
10 tb Bulgur; (cracked wheat)

1/2 c Currants
1/2 ts Salt
2 c Water
2 tb Pine nuts; toasted

INSTRUCTIONS

Coat a medium saucepan with cooking spray; place over medium heat
until hot. Add onion and carrot; sauté.5 minutes or until tender. Add
bulgur, currants, and salt; stir well. Add water; bring to a boil.
Cover, reduce heat and simmer 10 minutes or until bulgur is tender and
liquid is absorbed. Yield: 5 servings (serving size: 1 cup).
