Butter Rum Cheese Bars

INGREDIENTS

1 Roll Butterscotch Cookies; Refrigerated, slice and bake
1 c Sugar
16 oz Cream Cheese
2 md Eggs
2 ts Rum Extract

INSTRUCTIONS

Slice cookie dough 1/4-inch thick and place in bottoms of 2 greased 8 x
8-inch pans. Bake at 375 degrees for 15 to 20 minutes or until lightly
browned. (Will be puffy when removed from oven.) Beat cream cheese and
sugar until well mixed. Add eggs and extract. Beat until smooth. Pour half
of cheese mixture over each baked cookie layer. Bake at 375 degrees 20 to
25 minutes. Cool slightly, then refrigerate at least one hour. Cut into 20
bars per pan.
