INSTRUCTIONS
*Use lima beans in a pinch.
Bring 2 cups water and ham to a boil in a saucepan; boil 5 to 10 minutes.
Add butterbeans, salt, and pepper; return to a boil. Cover, reduce heat,
and simmer 45 minutes or until tender. Makes 4 servings.
Notes: Boiling a little lean ham in the cooking liquid really fools your
tongue; you'll think you're feasting on bacon. You can buy this small
amount of ham at your grocer's deli.
