INGREDIENTS

4 c Shredded cabbage
2 Oranges; peeled and cut into bite sizes
2 Red apples chopped
1 c Seedless red grape halves
1/4 c Currant or raisins
1/2 c Soy mayonnaise; (or mayonnaise of choice)
1/4 c "Better Than Milk" soy milk; (or milk of choice)
1 tb Lemon juice
1 tb Sucanat
1/8 ts Sea salt
1/2 c Chopped pecans; toasted

INSTRUCTIONS

In large bowl, toss cabbage, oranges, apples, grapes and currants;
cover and refrigerate. In a small bowl, combine soy mayo, soy milk,
lemon, sucanat and sea salt; cover and refrigerate. Just before
serving, stir dressing and pecans into salad.
