INSTRUCTIONS
Heat oven to 375 degrees. Grease cookie shet with shortening. Beat eggs in
a small bowl with fork. Mix bread crumbs and Cajun seasoning in small bowl.
Dip mushrooms, zucchini, and bell pepper into egg mixture, then coat with
bread crumb mixture. Arrange vegetables in single layer, pieces not
touching, on cookie sheet.
Bake 20 to 25 minutes, turning after 10 minutes, until coating is golden
brown. Serve hot.

NOTES : Cajun or Creole Seasoning usually contains hot peppers, garlic and
paprika. If you'd like a milder flavor, leave out the Cajun seasoning and
use 1/4 tsp salt and 1/8 tsp pepper instead.
