Calico Rice (quick Cooking)

INGREDIENTS

1 Green bell pepper, diced
1 Yellow bell pepper, diced
1 Red bell pepper, diced
1 Onion, diced
2 T Butter or margarine
1 1/2 c Uncooked long grain rice
1 Envelope dry onion soup mix
2 T Picante sauce, or salsa
1 T Ground cumin
4 Cloves garlic, minced
1/2 t Salt
3 c Water
Sour cream, optional

INSTRUCTIONS

In a skillet or saucepan, saute peppers and onion in butter for 3
minutes. Stir in the rice, soup mix picante or salsa, cumin, garlic,
salt and water. Bring to a boil. Reduce heat; cover and simmer for
20-25 minutes or until rice is tender. Garnish with sour cream, if
