1/2 ts Olive oil
1 c Bell peppers; chopped
1 c Onions; chopped
2 Cloves garlic; minced
30 oz Dark red kidney beans; drained and washed
29 oz Crushed tomatoes
1 c Water
3 c Turkey light meat; skinless, cooked and cubed
1 tb Chili powder
1 ts Coriander
1 ts Red pepper flakes
1 ts Salt
1 c Fat-free Cheddar cheese; grated

In a skillet heat oil over low heat. Add bell peppers, onions, and garlic.
Cook until tender. Then, add beans, tomatoes, water, turkey, chili powder,
coriander, red pepper flakes, and salt. Simmer 25 minutes.
Per serving: 139 Calories; 1g Fat (6% calories from fat); 23g Protein; 28g
Carbohydrate; 36mg Cholesterol; 1194mg Sodium
Serving Ideas : Serve topped with grated cheese, if desired.
