INGREDIENTS
4 | Med. sweet potatoes or yams | |
1 | c | Boiling water |
1/2 | c | Firm-packed lt. brown sugar |
1/4 | c | Butter or margarine |
1 | t | Prepared mustard |
1/2 | t | Salt |
2 | T | Chopped peanuts |
INSTRUCTIONS
Peel and slice the sweet potatoes, arrange in shallow 2-qt. baking dish. Combine water, sugar, butter, mustard and salt; pour over potatoes. Bake, covered with foil, at 325 F for 45 minutes. Remove foil. Spoon syrup over potatoes and sprinkle with chopped peanuts. Bake 20 minutes longer, basting several times, until potatoes are tender and slightly glazed and peanuts are lightly browned.
