Caramelized Banana

INGREDIENTS

1 Banana; under-ripe
1 ts Butter
1 tb Brown sugar
1 Pinches ground cinnamon; (up to 2)
1 tb Rum; brandy, or sherry, (optional)

INSTRUCTIONS

Slice banana in half lengthwise and arrange in a shallow oval baking dish
or gratin. Dot with butter, spinkle with brown sugar and cinnamon. If
desired, drizzle with rum, brandy, or sherry.
Bake 8 minutes in a preheated 450 degree oven, or until sugar caramelizes
and is bubbling. Cool enough to avoid burning your tongue, then eat.
